
CHEF'S TIP
While cooking this dish it will get very smokey, be sure to turn your ventilation fan on high or cook outside on the grill, but remember to spray the grill to prevent sticking.
DIRECTIONS
1. With a paper towel pat dry both sides of the tilapia filets.
2. Evenly coat each side of the tilapia with the Cajun seasoning and set
aside.
3. In a heavy bottom shallow pan such as a cast iron skillet, heat 2
tablespoons of olive oil on high heat.
4. When the pan is piping hot, carefully place both tilapia filets in the hot
pan and sear for about 2 minutes. After two minutes carefully flip the
fish with a pair of tongs and sear for another two minutes. Please
note that the fish will have a dark appearance.
5. Transfer the fish to a plate.
6. I recommend serving the fish with buttery rice and vegetables
